Okonomiyaki: Discover Japan’s Savory Pancake

Okonomiyaki is one of Japan’s most popular comfort foods. A thin pancake is cooked first, followed by a large amount of cabbage, bean sprouts, pork, and other ingredients. Noodles, usually soba or udon, are commonly added, and the dish is finished with an egg.

This layered style gives Hiroshima okonomiyaki a distinctive texture and appearance. It is especially popular in Hiroshima City and throughout the surrounding region.

Okonomiyaki is usually topped with a thick, slightly sweet sauce. Mayonnaise, dried seaweed powder, and bonito flakes may also be added. Many restaurants allow customers to watch the dish being prepared on a large iron griddle called a teppan.

Part of the appeal of okonomiyaki is its casual atmosphere. It can be enjoyed at small neighborhood restaurants, lively food districts, or specialized shops. In some places, diners cook the dish themselves at the table.

Okonomiyaki became especially popular in Japan during the 20th century and developed into a local specialty in several regions. Today, it is loved by people of all ages and is often associated with relaxed, social dining.
